I recommend this noodle for a Vietnamese dipping noodle called Bun Cha (so delicious!). If you put it back in water or lukewarm water for about 20-30 minutes, it can be preserved in that state. When you eat it, boil it from boiling water to your favorite firmness. Of course it's ok to boil it from the beginning.
